The other mole cake

Ingredients for 1 servings:

  • 50 g flour or oat flakes
  • 100 ml coconut milk, light
  • 1 egg(s)
  • 5 g baking powder
  • some sweetener or sweetener of your choice
  • 100 g frozen mixed berries
  • 1 tbsp chia seeds
  • 250 g low-fat curd cheese
  • 1 tsp psyllium husks
  • some vanilla flavor
  • possibly coconut flakes

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 1 hour; Total time approx. 7 hours 30 minutes

For a 16 cm springform pan, for 1 person

For the batter, separate the egg, then beat the egg whites until stiff and set aside. Now mix the other ingredients well and then fold in the beaten egg whites. Pour the batter into a small 16 cm springform pan lined with baking paper and bake in a preheated oven at 160°C (convection oven) for approx. 60 minutes. Then use a skewer to test whether the cake is cooked through. If it is, remove the cake and let it cool. Once cooled, remove the cake from the springform pan and set aside. For the filling, briefly warm the berries in the microwave and mash them into a puree. Then stir in the chia seeds and set aside until a jam forms. Now cream together the low-fat quark with a little vanilla extract and sweetener and stir in the psyllium husks well. Hollow out the cake to create a thin base and a small edge. Crush the crumbs from the hollowing out process again and set aside. These are a bit stickier, however, than other mole cakes, probably due to the coconut milk. Now spread the jam over the hollowed-out base and then spread the quark on top. Finally, mix the crumbs with the coconut flakes, spread them over the cake, and press them down. Refrigerate the cake overnight and enjoy it for breakfast or simply the next day.
