Vanilla rings with apricots

Ingredients for 1 servings:

  • 50 g apricot(s), dried
  • 50 ml orange juice without added sugar
  • 250 g spelt
  • 75 g sugar cane granules
  • 1 tsp vanilla
  • 2 small eggs
  • 135 g butter
  • 1 ½ tbsp maple syrup
  • 1 pinch of salt

Wholemeal cookies – enough for about 50 pieces

Soak the apricots in the orange juice and let it sit for a few hours. Grind the spelt into fine flour. Mix the flour with the sugar cane granules, vanilla, and salt. Make a well in the center. Crack in the eggs. Cut 100g of butter into small pieces and add it. Knead everything thoroughly. Form the dough into a ball and chill for at least 2 hours. Meanwhile, finely dice the apricots. Knead the chilled dough again and form into thin rolls. Cut the rolls into pieces and roll them into rings. Distribute the apricot pieces over the rings and place them on a baking sheet lined with baking paper. Bake in a preheated oven at 200°C for approx. 10-12 minutes. Heat the remaining butter and add the maple syrup. Heat while stirring until the mixture is combined. Brush the rings with the mixture while still warm and let dry.
