Chickpea and spinach patties

Ingredients for 2 servings:

  • 220 g chickpeas, cooked
  • 75 ml water, hot
  • 1 onion(s), red
  • 60 g oat flakes, fine
  • 60 g wholemeal spelt flour
  • 30 g whole wheat flour
  • 50 g baby spinach, fresh
  • 3 tbsp parsley, frozen or fresh
  • 1 tsp salt
  • 2 tbsp sesame seeds
  • 1 tsp sweet paprika powder

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

vegan and delicious

Roughly mash the cooked chickpeas and pour over the hot water. Finely chop the onion and add it to the chickpeas along with the spinach, chopped parsley, salt, and paprika. Blend everything thoroughly. Add the remaining ingredients, mix well, and let it rest in the refrigerator for 15-20 minutes. Form the dough into small patties and fry them in oil until crispy. These patties are a favorite with children. They’re best enjoyed with a delicious vegan dip, such as vegan chimichurri mayonnaise or vegan curry sauce.
