Ingredients for 2 servings:
- 1 bunch of basil
- 40 g pine nuts
- 40 g Parmesan
- 130 ml olive oil
- ½ tsp salt
- ½ tsp pepper
- ½ tsp sugar
- 1 small shallot(s)
- 1 small tomato(s), peeled
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Combine all ingredients except the oil in a blender and process. Once everything is relatively well blended, add the olive oil and continue blending until it reaches the consistency of pesto. Drizzle over cooked pasta, if desired.
