Ingredients for 1 servings:

  • ½ tsp pepper
  • 1 tsp coriander
  • 2 tsp salt
  • 2 tsp dried herbs, e.g. chives, parsley, oregano, basil, dill, chervil, thyme, rosemary,
  • 150 g oil
  • 75 g apple cider vinegar
  • 35 g honey
  • 1 tsp mustard

Working time approx. 5 minutes; Rest time approx. 5 minutes; Total time approx. 10 minutes

Finely grind the pepper, coriander, salt, and herbs in a smoothie maker. You can mix the herbs yourself or use a ready-made mix of freeze-dried salad herbs. Add the oil, vinegar, honey, and mustard. Blend the ingredients in the smoothie maker for 1 minute, then let it rest for 5 minutes, and finally blend for another minute. You should now have a creamy emulsion that you can pour into a screw-top jar. To use, mix the dressing with water or cream in a ratio of 1:3, i.e., 1 part dressing to 3 parts water or cream. The dressing will keep in the refrigerator for several weeks.
