Zucchini rolls

Ingredients for 4 servings:

  • 500 g zucchini
  • 30 g feta cheese
  • 150 g cream cheese
  • 2 tbsp breadcrumbs
  • 25 g olives, black, without stones
  • 25 g green olives, pitted
  • salt and pepper
  • lemon juice
  • 1 garlic clove(s)
  • 1 pinch(s) of sugar
  • 1 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

for a small appetite or as a starter

Cut the zucchini lengthwise into thin strips. Finely chop the garlic and finely chop the olives. Make a cream from the cream cheese, crushed feta, breadcrumbs, olives, and garlic. Season with salt, pepper, sugar, and a little lemon juice. Spread the mixture over the zucchini strips. Roll up and secure with a toothpick. Heat the olive oil in a pan and fry the rolls briefly on all sides. Or grill in the oven for 10 minutes. I served it with bell peppers. It also goes well with salad or as a side dish to pan-fried dishes.
