Zoodels – zucchini spaghetti in St. Agur cream

Ingredients for 2 servings:

  • 4 small zucchini or 2 larger ones
  • 2 garlic cloves, peeled, in large pieces
  • 1 onion(s), diced
  • 1 tbsp oil or clarified butter
  • 100 g blue cheese (St. Agur, Gorgonzola also works)
  • 1 bottle of Cremefine or 1 cup of cream
  • 2 tbsp walnuts optional
  • 2 tsp broth, granulated
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

can be eaten pure or as a healthy sauce with pasta

Heat the fat in a pan and sauté the onions. Meanwhile, slice the zucchini into strips using a spiralizer. Puree the cheese with garlic, bouillon powder, a pinch of pepper and salt, and cream in a blender or with an immersion blender. When the onions have browned, add the zucchini and sauté briefly. Pour in the cream mixture and cook briefly, stirring, until the zucchini is tender but still firm to the bite. Done! Tastes great with boiled potatoes or spaghetti, but also on its own as a low-carb meal.
