Mini quark cakes with crumble

Ingredients for 2 servings:

  • 350 g quark
  • 2 egg yolks
  • 40 g coconut blossom sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 50 g butter
  • 75 g spelt flour
  • 25 g coconut blossom sugar
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit fan-assisted). Whisk the ingredients for the quark mixture until creamy. Grease 2-4 ovenproof bowls or glasses with butter and fill with the quark mixture. For the crumble topping, melt the butter, then add it to the remaining ingredients and stir with a wooden spoon until crumbly. Spread the crumble mixture over the quark mixture. Then place the cakes in the oven (middle rack) and bake for about 30-35 minutes, until the crumble is nicely browned. Remove from the oven and let cool completely.
