Mango and Onion Chutney

Ingredients for 2 servings:

  • 1 mango(s), ripe, diced
  • 40 g brown sugar
  • 4 tbsp vinegar
  • 1 tsp salt
  • ½ small chili pepper(s), (chopped)
  • 3 carnations
  • 1 pinch of cayenne pepper
  • ¼ tsp cardamom
  • 2 small onions
  • 4 tbsp apple juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

delicious with chicken nuggets or prawns or fish terrine

Bring all ingredients to a boil in a saucepan and simmer uncovered over low heat for 40 minutes, stirring frequently. Remove the cloves and transfer to a screw-top jar. Refrigerate until ready to serve. Keeps refrigerated for up to 1 week!
