Ingredients for 1 servings:

  • 1 ½ kg zucchini
  • 3 tbsp salt
  • 500 g onion(s)
  • 500 ml vinegar (wine vinegar)
  • 500 g sugar
  • 1 ½ tbsp mustard
  • 1 ½ tbsp paprika powder
  • 1 tbsp curry
  • 1 tbsp black pepper
  • ½ tube(s) tomato paste

Working time approx. 30 minutes; Total time approx. 30 minutes

Also ideal for all pan-fried dishes, for grilling or simply on bread

Let the finely grated zucchini (unpeeled) soak in the salt overnight to release the water. Finely chop the onions and bring to a boil with the vinegar. Add the sugar, mustard, and the squeezed zucchini. Simmer gently for about 30 minutes, stirring. Then season with paprika, curry, pepper, and tomato paste and bring to a boil again. While still hot, pour into screw-top jars and seal tightly.
