Ingredients for 3 servings:
- 400 g silken tofu
- 30 g ginger root
- 10 g turmeric root
- ½ tsp turmeric powder
- ½ tsp cardamom
- ½ tsp sea salt, as needed
- 1 tsp sambal oelek
- 2 tbsp soy sauce
- 20 g hemp flour
- 20 g chickpea flour
- 30 g breadcrumbs
- 500 ml rapeseed oil for frying
- 125 g peanuts, salted and roasted
- 1 orange(s)
- 1 lemon(s)
- 40 g ginger root
- 1 stalk of lemongrass
- 1 tsp sambal oelek
- 1 tbsp tomato paste
- 3 tbsp peanut butter
- 1 tsp sea salt, as needed
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

In a bowl, mash the silken tofu into small pieces. Grate the ginger and turmeric root and add them. Add all the spices and mix well. Let everything steep for about 30 minutes. In the meantime, make the peanut sauce. Squeeze the lemon and orange juice. Finely chop the lemongrass. Place the peanuts in a saucepan with the lemon and orange juice. Add the lemongrass and sambal oelek. Simmer the sauce gently, adding more water if needed. Add the tomato paste and spices. Puree everything and finally thicken with the peanut butter. Season with salt. Roll the silken tofu into balls. Heat the oil in a pan for deep-frying. Deep-fry the balls for about 4 minutes. Plate and serve.
