Egg salad with low-fat curd cheese

Ingredients for 4 servings:

  • 500 g low-fat curd cheese
  • 6 eggs
  • 2 m.-sized onion(s)
  • 1 tsp mustard
  • some salt and pepper
  • Garlic
  • Parsley
  • Paprika powder
  • possibly chili powder

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 35 minutes

Dice the onions very finely. Boil the eggs hard and let them cool. Then peel, halve, and slice them into thin strips. Mix the low-fat quark with the eggs, mustard, and onions. Season with salt, pepper, garlic, parsley, and paprika (to taste). If you like, you can add chili (I like to do that). Refrigerate until ready to serve.
