Green asparagus with bacon in puff pastry

Ingredients for 2 servings:

  • 500 g asparagus, green, fresh
  • 250 g bacon slices
  • 1 pack of puff pastry from the refrigerated section
  • 30 g butter or clarified butter
  • 3 dashes lemon juice
  • e.g. salt and pepper
  • little sugar
  • 1 egg yolk

fresh, healthy food during asparagus season

You don’t need to peel the fresh, green asparagus; just wash it. Trim the ends if they’re slightly woody. Bring the boiling water to a boil and add salt, pepper, sugar, butter, and lemon juice. Add the asparagus whole and simmer for about 10-15 minutes, but until it’s still firm to the bite. Let the asparagus cool slightly, then wrap it in 1-2 slices of bacon. Cut the puff pastry lengthwise into 1-2 cm thick strips and wrap these around the asparagus as well. Brush the stalks with egg yolk and bake on a baking sheet lined with baking paper in the oven at 180°C for about 15 minutes. Serve as a side dish with mashed potatoes with chickpea purée and herbs (e.g., wild garlic) and green asparagus pesto. You can also use white or blanched asparagus instead of green asparagus.
