Ingredients for 4 servings:

- 150 ml rapeseed oil, sunflower oil or olive oil *see note
- 1 pinch of salt
- pepper
- 1 tsp mustard, medium hot
- ¼ lemon(s), juice
- 1 tsp, levelled sugar

* Since olive oil has a stronger flavor, only use up to 1/3 of the total amount of oil. Use neutral oil for the rest. If the mayonnaise is not yet thick enough, add a little more oil and continue mixing. Have a tall, narrow container and the hand blender ready. The container should be only slightly larger in diameter than the blender. First, crack the egg (it can come straight from the fridge) into the mixing bowl. Yes, the whole egg with the egg white!! Then add the mustard, salt, pepper, and lemon juice. Now pour in the oil. Yes, all the oil at once. Now place the hand blender on the bottom of the container and switch it on. Let the blender stand there until it no longer thickens and no longer mixes. Then very slowly pull the hand blender up and mix in the remaining oil. When all the oil is blended, the mayonnaise is ready. Now you might want to season it a little with lemon juice, salt, sugar, or pepper. Some people also like it as garlic mayonnaise. It was easy, wasn’t it? And it always works!
