Zucchini fritters with cheese

Ingredients for 4 servings:

  • 1 m.-large zucchini, approx. 30 cm, cleaned, coarsely grated
  • 100 g cheese (Parmesan, aged Gouda), grated
  • 2 medium-sized eggs, fresh
  • Flour
  • 1 garlic clove(s)
  • salt and pepper
  • Herbs, chopped as desired
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Squeeze the grated zucchini well and mix with the cheese, eggs, herbs, and garlic. Add enough flour to form a dough, season with salt and pepper to taste. Form into patties and fry in hot oil until golden brown.
