Fried zucchini with thyme

Ingredients for 4 servings:

  • 2 zucchini, firm
  • 1 clove(s) garlic
  • 1 tsp thyme, fresh
  • 5 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Clean the zucchini and quarter it lengthwise. Cut the quarters diagonally into diamond shapes. Mix them with olive oil, thyme (roughly chopped), and garlic, and fry in a pan until lightly browned. Season with salt and pepper and serve warm as a side dish or, in a variation with eggplant and bell peppers, as an appetizer.
