Oatmeal Banana Cookies

Ingredients for 1 servings:

  • 1 cup oat flakes, coarse, whole grain
  • 1 m.-large banana(s), ripe
  • 2 tbsp raisins or other dried fruits

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mash the banana with a fork until creamy. Simply add the oats and raisins and mix. Drop the mixture in small chunks onto a baking sheet lined with parchment paper. Bake at 180°C (fan oven) for about 15 minutes. This recipe can be varied in many ways; I sometimes add a little bitter almond oil, cinnamon, or ground nuts. The riper the banana, the sweeter the cookies will be. They’re sweet enough for me, but you could also replace the raisins with chocolate chips or something similar. These cookies are very healthy and safe to eat.
