Chicken breast with creamy tomato sauce and couscous

Ingredients for 2 servings:

  • 2 chicken breasts
  • 1 can/n tomatoes, peeled
  • 1 onion(s)
  • 1 bell pepper(s)
  • Couscous
  • 250 ml milk or cream
  • Cheese – any kind that melts well
  • basil
  • oregano
  • salt and pepper
  • herb butter
  • olive oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Fry the chicken breast in a little olive oil and set aside. In the same pan, melt a knob of herb butter, fry the chopped onions and bell peppers in it, and then add the tomatoes. Lightly chop the tomatoes with a fork. Bring to a boil briefly, and season with cream, cheese, and spices. Add the cheese either directly to the sauce and simmer while stirring until the cheese has melted, or serve it grated. Prepare the couscous according to the package instructions and then serve with the tomato sauce and the chicken. Broccoli or beans go well with it. This recipe is also delicious for toddlers (from 1 year old) if the chicken breast is chopped up and no salt is used. In this case, halve the quantities or just eat it! I use a little more herb butter – very flavorful, but low in salt.
