Whole-grain fitness bread from the air fryer

Ingredients for 1 servings:

  • 150 g whole wheat flour
  • 150 g wholemeal rye flour
  • 1 tbsp agave syrup or maple syrup
  • 1 packet of dry yeast
  • 125 ml water, approx.
  • 40 g walnuts, roughly chopped
  • 35 g sunflower seeds
  • 50 g cranberries
  • 1 tsp linseed oil
  • 1 tsp, leveled salt
  • ½ tsp fennel seeds, ground
  • ½ tsp caraway powder
  • ½ pack of sourdough extract
  • Water for brushing

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 25 minutes

for an XXL hot air fryer

Sift the flour into a baking bowl. Mix the dried yeast with the flour. Add the agave syrup and oil and knead with about 1/8 l of lukewarm water until you have a smooth dough. If the dough is a bit too stiff, add a little more water. Then add the walnuts, cranberries, sunflower seeds, salt, fennel, and caraway seeds to the dough and knead well. Cover the dough and let it rise in a warm place for 30 minutes. Then transfer the dough to a greased 20 cm loaf pan and let it rise, covered, for another 40 minutes. Place the bread in the air fryer basket and bake for 5 minutes at 200°C. Then bake for another 55 minutes at 180°C. Brush the bread with water occasionally to give the crust a nice shine.
