Avocado-bulgur-tomato towers on lamb's lettuce

Ingredients for 2 servings:

  • ½ cup bulgur (200 ml)
  • ¾ cup water, hot
  • e.g. salt and pepper
  • 1 small tomato(s)
  • 1 piece(s) cucumber(s), 2 cm
  • 1 piece(s) avocado(s), 2 cm
  • 2 handfuls of lamb’s lettuce
  • some lemon or lime juice
  • 2 tbsp vinegar, mild
  • 1 pinch(s) of sugar
  • 1 tbsp oil
  • e.g. chili

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Pour hot water over the bulgur and let it swell for 10 minutes. Season with salt and pepper. Wash the tomatoes, remove the stems, and finely dice. Wash and finely dice the cucumber. Peel and finely dice the avocado. Mix the bulgur and vegetables and season with citrus juice, 1 tablespoon of vinegar, salt, pepper, and chili. Trim and wash the lamb’s lettuce. Mix with vinegar, a pinch of sugar, and oil, and serve on plates. Arrange the bulgur in dessert rings on top.
