Patties with salsify

Ingredients for 1 servings:

  • 190 g millet = 1 cup
  • 2 cups water
  • 320 g salsify, peeled, finely grated (food processor)
  • 2 tbsp balsamic vinegar, lighter
  • 100 g millet, ground
  • 65 g sesame seeds (unpeeled) organic, ground
  • 1 tsp salt
  • 1 pinch(s) of raw cane sugar
  • 20 peppercorns, ground

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Rinse the millet with hot water to remove any bitterness, then add it to 2 cups of boiling water. Bring to a boil. If the pot is small, we recommend placing a large spoon or similar object in it to prevent it from boiling over. Reduce the heat. When the water is no longer visible and bubbling, turn off the heat, close the lid, and let it swell for about 5-12 minutes. It will then be almost white and grainy. Loosen and place in a large bowl, along with all the other ingredients. Mix together. Form patties with wet hands (no more liquid is needed), then brown in the hot frying fat over reduced heat.
