Puff pastry triangles with spinach and feta

Ingredients for 1 servings:

  • 1 pack of puff pastry
  • 300 g spinach, chopped, frozen
  • 4 tbsp Cheddar cheese, grated
  • 150 g feta cheese, crumbled
  • 1 small onion(s), chopped
  • 2 eggs
  • oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

simple, tasty, quick and productive

Heat the oil in a pan, add the onion, and fry until translucent. Add the thawed raw spinach (without any bubbling!) and sauté for a few moments. If the spinach is releasing too much liquid, drain it, add the cheese and a beaten egg, and mix everything well. Roll out the puff pastry and cut into squares, about 10 x 10 cm – but any other shape will work if you don’t necessarily want triangles. Fill with the spinach mixture, fold into triangles, brush with a beaten egg, and place on a prepared baking sheet. Bake in a preheated oven at 175°C (convection oven) for about 20 minutes, or until the triangles are golden brown. I’m not a fan of spinach, but these triangles are sensationally good, and so do my guests. Tips: These triangles are easy to prepare. I baked about five packages of puff pastry for my birthday, but I prepared the filling well in advance and refrigerated it. Then simply cut the puff pastry to size, fill and spread it, and place it in the preheated oven. Frugal cooks will have enough filling left over for more puff pastry triangles, so feel free to halve the amount for the spinach mixture.
