Fried fish bites with vegan remoulade

Ingredients for 8 servings:

  • 40 g butter
  • 125 g flour + a little more for breading
  • 1 tsp baking powder
  • 2 eggs, size M
  • 125 ml beer
  • 2 liters of vegetable frying oil
  • 500 g fish fillet(s), boneless, skinless (e.g. redfish or cod)
  • Sea salt flakes
  • 1 lemon(s) for serving
  • 1 clove(s) garlic, young
  • 80 g yogurt, vegan
  • 2 tbsp mayonnaise, vegan
  • 1 tbsp grainy mustard
  • 1 tsp dill tips, dried
  • 1 pinch of sweet paprika powder
  • salt and pepper

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

German tapas

For the batter, melt the butter. Mix the flour and baking powder. Separate the eggs. Mix the egg yolks, melted butter, and beer with the flour mixture. Beat the egg whites until stiff and fold into the batter. Let the batter rest for a short while. For the remoulade, press the garlic and mix it with the yogurt, mayonnaise, mustard, dill tips, and paprika. Season with salt and pepper. Heat the frying oil in a pan to approximately 140 degrees Celsius. Pat the fish dry with kitchen paper and cut into bite-sized pieces. Season all over with salt and pepper. Put 2-3 tablespoons of flour in a working bowl. Toss the fish pieces in batches, shaking off any excess flour. Drag the fish in batches with a fork or kitchen tweezers through the batter, ensuring the batter adheres all over. Then deep-fry in the hot oil for approximately 2 minutes until golden brown and crispy, turning carefully once if necessary. Drain the fish on kitchen paper, then sprinkle with sea salt flakes and serve with lemon and remoulade.
