Ingredients for 8 servings:
- 1 jar pickled gherkins (dill bites)
- 2 tbsp flour
- 150 g Panko (coarse Japanese breadcrumbs)
- 2 liters of vegetable frying oil
- Sea salt flakes
- 1 clove(s) garlic, young
- 80 g yogurt, vegan
- 2 tbsp mayonnaise, vegan
- 1 tbsp grainy mustard
- 1 tsp dill tips, dried
- 1 pinch of sweet paprika powder
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
German tapas
For the remoulade, press the garlic and mix with the yogurt, mayonnaise, mustard, dill sprigs, and paprika. Season with salt and pepper. Heat the frying oil to 140 degrees Celsius. Drain the dill bites well on kitchen paper. Mix the flour with about 6 tablespoons of cold water. Place the panko bread in a bowl. Coat the dill bites all over in the flour mixture, then in the panko bread. Fry the breaded dill bites in batches in the hot oil for 4-5 minutes until golden brown and crispy. Drain on kitchen paper, sprinkle with sea salt flakes, and serve with the vegan remoulade.
