Ingredients for 4 servings:
- 1.4 kg roast beef
- e.g. salt and pepper
- 2 tbsp oil

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
First, the meat must be trimmed, meaning the tendons and excess fat must be removed. Then, using a sharp knife, cut a diamond shape into the fat layer, being careful not to cut into the meat. Sear the roast beef in a large pan with hot oil until a crust forms. Then season generously with salt and pepper. Preheat the oven to 160°C and add the roast beef. Leave the meat in the oven until it reaches an internal temperature of 56°C (approx. 30 minutes). Now remove the meat and let it rest for 10 minutes before carving.
