Vegan pear and cheese bites

Ingredients for 4 servings:

  • 200 g soy quark (quark alternative)
  • 80 g tofu, Asian fermented, white, mild
  • 1 handful of walnuts
  • 3 tbsp protein powder (sesame protein)
  • Salt and pepper, white
  • 2 pears, ripe

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the soy curd* with sesame protein, salt, and pepper and the fermented tofu**. Chop half of the walnuts and mix them into the cream, reserving the other half as a garnish. Wash the pear and cut it into approximately 0.8 cm thick slices, then further into bite-sized pieces. Spread about a teaspoon of cream cheese on each pear piece and garnish with a nice piece of walnut. *Soy curd can be made from homemade soy kefir or soy yogurt, which is drained. Alternatively, soy milk can be coagulated with lemon juice and strained. **Asian fermented tofu, e.g., from Wangzhihe or Eaglobe, has a cheesy flavor, similar to Roquefort. It is available at Asian markets.
