Black Bean Peanut Brownies

Ingredients for 1 servings:

  • 360 g beans, black, cooked
  • 2 tsp vanilla extract
  • 2 tbsp peanut butter or peanut puree
  • 12 large dates, sweet, or 24 small ones
  • 5 tbsp cocoa powder
  • 1 tbsp cinnamon
  • 2 tbsp oat flakes, as desired

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 40 minutes

Combine the black beans, pitted dates, vanilla extract, and peanut butter in a blender or food processor until smooth. Then stir in the cinnamon and cocoa powder. If the batter is too wet, add oats. If the batter is too dry, add more peanut butter. Pour the batter into a baking dish lined with parchment paper and bake in the oven at 170°C for 30 minutes. After baking, let it cool and then freeze for two hours. Tip: The brownies can, of course, be decorated with all kinds of fruit, nuts, or chocolate.
