Ingredients for 1 servings:

  • 4 sprig(s) herbs of your choice (e.g. rosemary, thyme, basil, oregano or mint)
  • 500 ml extra virgin olive oil

Instructions

Working time approx. 25 minutes; Rest period approx. 22 days; Total time approx. 22 days 25 minutes

Herb oil e.g. for pizzas

Wash the herbs and shake dry, then pat them thoroughly dry. It’s best to let them dry overnight so they’re completely dry. Place the herbs in a bottle and pour the oil over them. The herbs should be completely covered with oil. Let them steep at room temperature for 3 weeks. Then pour the oil through a sieve and discard the herbs. Store the oil in a dark place, if possible, and at temperatures below 20°C. It will keep for about six months.
