Chickpea and smoked tofu salad with soybeans, green beans and avocado

Ingredients for 4 servings:

  • 200 g chickpeas
  • 200 g soybeans
  • 100 g beans, green, fresh
  • 1 pack of smoked tofu
  • some oil for frying
  • 1 avocado(s)
  • 1 bunch of parsley
  • 5 tbsp oil of your choice
  • 1 shot of vinegar of your choice
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Prepare the chickpeas and soybeans according to the package instructions. Halve the beans or cut them into even shorter stalks, depending on your preference. Blanch them in boiling water for about five minutes, then rinse them with cold water. Cut the tofu into small or large cubes and fry them in a little oil. Season to taste. Peel and dice the avocado. Place the chickpeas, soybeans, beans, tofu, and the avocado in a bowl. Finely chop the parsley and stir in. Mix all ingredients well and season to taste with oil, a little vinegar, salt, and pepper.
