Ingredients for 1 servings:

  • 1 lemon(s), juice
  • 1 dash of olive oil or as desired
  • 1 dashes sweetener, optional
  • e.g. salt and pepper
  • 1 avocado(s)
  • 1 tomato(s)
  • 1 piece(s) snake cucumber(s), approx. 6 cm long
  • ½ bell pepper(s), red
  • 2 handfuls of arugula
  • 3 tbsp, heaped white beans, from the can

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Squeeze the lemon and mix with the oil, sweetener (optional), salt, and pepper to make a salad dressing. Halve the avocado, remove the pit, scoop out the flesh, and cut into small cubes. Remove the stem from the tomato and dice it as well. Repeat with the cucumber and bell pepper. Add the ingredients to the salad dressing and mix well. Then finely chop the arugula and add it. Finally, stir in the beans. The amounts and ingredients can be varied according to taste and hunger.
