Noodles with fried eggs

Ingredients for 2 servings:

  • 125 g spiral noodles
  • 4 large eggs
  • 1 onion(s), white
  • 2 tbsp vegetable oil
  • 1 small bunch of chives
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the pasta in plenty of salted water according to the package instructions and drain. Peel the onion and finely dice. Wash the chives and finely chop them. Heat the olive oil in a large pot and sauté the onions. Add the cooked pasta to the onions and sauté briefly. Season with salt and pepper and stir in the chives. Fry the eggs into fried eggs, keeping the yolks still runny. Season the eggs only with salt. Arrange the pasta on plates, place the fried eggs on top, pierce the yolks, and use them as a sauce.
