Pasta in paprika, honey and mustard sauce

Ingredients for 2 servings:

  • 250 g pasta, e.g. penne
  • 3 pointed peppers
  • 1 onion(s)
  • 1 can coconut milk
  • 4 tbsp, heaped mustard
  • 2 tbsp honey
  • 1 tbsp oil
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the pasta in salted water according to the package instructions until al dente. Trim the bell peppers and cut into bite-sized pieces. Peel the onion, dice it finely, and sauté it in oil. Add the bell peppers and fry until well-cooked. Then add the coconut milk and simmer over medium heat with the lid on for about 10 minutes (depending on how firm you want the peppers). Add the honey and mustard. You may need more or less honey; this is also a matter of taste. Finally, season with salt and stir in the pasta.
