Sweet potato mash with mustard

Ingredients for 3 servings:

  • 2 large sweet potatoes
  • 2 large potatoes, floury
  • 1 small onion(s)
  • e.g. fat, for frying
  • 2 tsp mustard, hot
  • ½ clove(s) garlic, finely chopped
  • 1 tbsp butter
  • n. B. Salt
  • e.g. pepper, freshly ground

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and finely chop the onions, and brown them in a pan. Peel the sweet potatoes and potatoes and boil them in salted water for about 20 minutes until soft, then mash them. Add the butter, browned onions, garlic, and mustard and mix well until the butter has melted. Season with salt and pepper. I like to serve this puree with turkey breast cooked in a Roman pot.
