Summer salad with green asparagus, strawberries and halloumi

Ingredients for 4 servings:

  • 500 g asparagus, green, cut into pieces
  • 300 g strawberries, sliced
  • 250g halloumi
  • 100 g arugula
  • 80 ml olive oil
  • 3 tbsp balsamic vinegar, dark
  • 2 tbsp honey
  • 1 tbsp chia seeds or poppy seeds
  • salt and pepper
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Low carb, vegetarian, light, quick

Fry the asparagus pieces in a pan with olive oil for about 10 minutes. Cut the halloumi into small cubes and fry until golden brown. Meanwhile, in a salad bowl, combine the olive oil, balsamic vinegar, honey, and chia or poppy seeds to make the dressing. Season with salt and pepper. Tear the arugula into large pieces. Toss the asparagus, arugula, strawberries, and halloumi with the dressing in the salad bowl.
