Salmon and spinach roll

Ingredients for 4 servings:

  • 225 g spinach (frozen)
  • 4 eggs
  • 200 g cream cheese
  • 250 g smoked salmon
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Thaw the spinach and separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Purée the spinach with the egg yolks, a little salt, pepper, and nutmeg in a food processor. Carefully fold the egg white mixture into the spinach mixture. Place this dough on a baking sheet like a Swiss roll and bake in a preheated oven at 200°C (top/bottom heat) for about 10-12 minutes, then let it cool. Spread the cream cheese on top and top with the salmon. Roll up and let it set in the refrigerator for at least 30 minutes. Then slice. This looks great on any buffet and can also be served slightly warmed.
