Cauliflower and broccoli tarte flambée

Ingredients for 4 servings:

  • 400 g wholemeal wheat flour or wholemeal spelt flour
  • 250 g water
  • 3 tbsp olive oil
  • 5 g salt
  • 200 g sour cream
  • 200 g quark
  • 4 cloves garlic
  • salt and pepper
  • Chili, optional
  • 1 ball of mozzarella, thinly sliced
  • ¼ head of cauliflower, including the florets
  • ¼ head of broccoli, including the florets

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wholesome

Make a smooth dough from flour, water, oil, and salt. Roll it out into four thin pieces. Mix the sour cream, quark, garlic, and spices and season to taste. Spread it thinly among the four pieces. Slice the mozzarella very thinly and divide the slices again so they are easier to distribute. Slice the cauliflower and broccoli florets and steam them for five minutes (in salted water). Drain and spread them on the tarte flambée. Spread the mozzarella on top. Meanwhile, preheat the oven to 200°C (400°F) and bake the tarte flambée for 10-15 minutes until crispy.
