Low-carb zoodle casserole with chicken

Ingredients for 4 servings:

  • 2 zucchinis
  • 50 g dried tomatoes in oil
  • 300 g chicken breast
  • 2 cloves garlic
  • 200 ml cream
  • 100g mozzarella
  • 2 sprigs basil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash and dry the zucchini, then spiralize it into spaghetti. Drain the tomatoes and cut into small pieces. Pat the chicken breast dry and cut into strips. Peel and finely chop the garlic and fry it in a pan. Add the chicken strips and fry until golden brown. Add the cream and tomatoes and bring to a boil briefly. Season with salt and pepper. Then stir in the zucchini. Transfer everything to a baking dish, sprinkle with cheese, and bake at 180°C for about 25 minutes. Wash the basil, shake it dry, and pick off the leaves. Garnish the finished casserole with basil and serve.
