Lightning-fast light kohlrabi and apple salad

Ingredients for 2 servings:

  • 1 kohlrabi
  • 1 apple
  • 100 g natural yogurt
  • 1 tbsp lemon juice
  • 1 tbsp chives, frozen
  • salt and pepper
  • 1 tbsp hazelnuts

Peel the kohlrabi and core the apple. Finely dice both, or better yet, grate them. For the dressing, combine the yogurt with lemon juice, chives, salt, and pepper. Roast the hazelnuts in a fat-free state for about 2-3 minutes, then roughly chop. Toss the kohlrabi and apple with the dressing and sprinkle with hazelnuts. Tip: Tastes even better when it’s been left to marinate for a while.
