Emily's pancakes with pears and vanilla ice cream

Ingredients for 4 servings:

  • 250 g wheat flour
  • 350 ml milk, fresh low-fat
  • 4 eggs
  • 4 tbsp sugar
  • 1 tsp baking powder
  • 2 bulb(s)
  • 1 lemon(s)
  • 40 g butter
  • 500 ml ice cream, vanilla
  • 1 tsp cinnamon powder
  • 1 pinch of salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Mix flour, eggs, milk, 3 tablespoons of sugar, baking powder, and salt into a smooth batter. Squeeze the lemon. Quarter the pears, core them, and cut them into wedges. Drizzle with lemon juice and stir into the batter. Heat 10g of butter in a pan and add a quarter of the batter. Cook 4 pancakes one after the other until golden brown. Spoon the ice cream onto the warm pancakes, mix the remaining sugar with the cinnamon, and sprinkle over the top. Serve the warm pancakes with the ice cream immediately.
