Ingredients for 4 servings:

  • 4 eggs
  • 30 g sugar
  • 1 packet of vanilla sugar
  • 350 ml milk
  • 4 tbsp sweet cream
  • 125 g spelt flour
  • 1 pinch of salt
  • 40 g almond flakes
  • 60 g butter
  • powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

First, separate the eggs. In a bowl, whisk the egg yolks with sugar, a pinch of salt, and the vanilla sugar until creamy, then gradually stir in the spelt flour and milk. Beat the egg whites until stiff peaks form and carefully fold into the batter. Melt the butter in a pan over moderate heat, then brown the flaked almonds. Caution: Butter and flaked almonds burn very easily! Pour the batter into the pan as soon as possible, about 1 cm deep, and bake until the bottom is lightly browned. Then, using two spatulas, flip the batter, tearing it into larger “shreds” but not too wildly. Flip it frequently until it is nicely browned. Sprinkle with powdered sugar on a plate. Serve with compote. This Schmarrn also tastes good cold.
