Smokey's Mozzarella

Ingredients for 1 servings:

  • 1 large beef tomato(s) , or 2 medium
  • 1 ball of mozzarella, buffalo
  • 2 stalks of celery, if very young maybe 4
  • 2 handfuls of cress
  • 1 small onion(s), red, cut into rings
  • 1 tbsp sunflower seeds, roasted without fat
  • 3 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Pepper, from the mill
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

SiS-suitable – light summer dinner

Cut the tomato into thin slices crosswise and arrange them in a ring on a plate. Slice the mozzarella and place them in the center. Spread the cress over the tomato slices and arrange the onion rings on top. Cut the celery into thin half-moons. For the dressing, whisk the oil and balsamic vinegar with salt and pepper, add the celery, and mix well. Spread the celery sauce evenly over the tomatoes. Finally, sprinkle the sunflower seeds on top. A perfect summer dinner.
