Cretan lamb's lettuce with feta cheese

Ingredients for 4 servings:

  • 200 g lamb’s lettuce
  • 1 m.-large onion(s), (red)
  • 150 g mushrooms
  • 1 medium-sized bell pepper(s), (red)
  • 8 m.-sized cherry tomatoes
  • 1 clove(s) garlic
  • 2 tbsp white wine vinegar
  • 1 tsp mustard (hot)
  • Salt
  • pepper
  • 1 pinch(s) of sugar
  • 1 medium-sized lemon(s), (juice)
  • 4 tbsp olive oil
  • 1 pack of sheep’s cheese (salakis with or without herbs)
  • n. B. herbs
  • Olives, black

Thoroughly wash and trim the lamb’s lettuce and spin dry. Slice the onion into rings. Clean the mushrooms, halve them, or slice them. Dice the bell peppers. Halve the cherry tomatoes. For the dressing, crush the garlic clove, mix the vinegar, mustard, salt, pepper (preferably black pepper from the mill), sugar, and lemon juice thoroughly until the crystals have dissolved. Then whisk in the olive oil. Arrange the salad on plates, drizzle with the dressing, and sprinkle with crumbled feta. I also added some basil and thyme, as well as a few chopped black olives marinated in garlic and herbs. Serve with baguette. Two of us ate this salad without bread (one small portion was left over), and we were very full and completely satisfied afterwards.
