Ingredients for 6 servings:
- 100 g flour
- 60 g cheese (Gouda), grated
- 70 g butter, room temperature
- 1 tsp cream
- some nutmeg, freshly grated
- salt and pepper
- some cumin
- 1 egg yolk, whisked
- 1 tbsp cream
- 150 g cheese (Gouda), grated
- 75 cl cream
- 1 egg yolk
- some pepper
- Nutmeg, freshly grated
- 1 bunch of chives
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes
as a starter or main course
For the dough, knead the flour with the softened butter, cheese, and cream and season to taste. You can also use other spices or a different cheese. However, make sure the cheese is not too strong. Chill the dough for about 1 hour. Then roll out into a rectangle so that you can cut out 12 rectangles of about 4×8 cm. Whisk the egg with the cream and brush half of the rectangles with it. Then sprinkle with the cumin seeds. Bake all 12 dough rectangles in the oven at about 160 degrees Celsius (convection oven) for 10-15 minutes until golden brown. Then let cool. Meanwhile, prepare the filling by pureeing the cheese with the egg yolk and cream in a blender. Season to taste and finally mix in the chopped chives. Chill until the rectangles have cooled. Then spread the cheese mixture over the 6 bases and place a lid on each one. The cream slices can be reheated briefly at 160 degrees Celsius before serving. They can also be served cold. Either as an appetizer for 6 people or as a hearty main course with some salad for 2 people.
