Oven-baked pangasius with vegetables

Ingredients for 2 servings:

  • 4 fish fillets (pangasius fillet), frozen
  • 400 g potatoes, new potatoes or thin-skinned potatoes
  • 1 bunch of parsley
  • 1 lemon(s), untreated
  • 2 red bell peppers
  • 1 large onion(s)
  • some olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Line a high-sided baking sheet with parchment paper. Preheat the oven to 200°C/top/bottom heat. Cut the potatoes into thick slices or wedges. Roughly dice the onion. Roughly dice the bell pepper. Place the pangasius fillets side by side on the baking sheet. Distribute the prepared vegetables evenly over the baking sheet. Season with salt and pepper to taste. Finally, drizzle with olive oil. Don’t overdo it, but don’t use too much oil either. Place the baking sheet in the oven for about 25 minutes. Once the potatoes are tender, remove the baking sheet from the oven. Sprinkle with chopped parsley. Serving size for 2 hungry mouths or 4 frugal eaters. A quick, easy recipe with a high enjoyment factor. The fish, vegetables, and herbs are interchangeable, making the dish tasty for everyone.
