Crostini with cucumbers on feta cheese cream

Ingredients for 4 servings:

  • ½ m.-sized cucumber(s)
  • 8 slices of baguette
  • 1 m.-large shallot(s)
  • 2 tbsp olive oil
  • 1 tbsp natural yogurt
  • 1 tbsp pumpkin seed oil
  • 300 g sheep’s cheese
  • 1 bunch of chives
  • 2 tsp balsamic vinegar, white
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the peeled cucumber and scoop out the seeds with a spoon. Finely dice the cucumber. Combine the oil, vinegar, salt, pepper, and sugar and mix with the finely chopped shallot into the cucumber. Blend the feta cheese with the yogurt and pumpkin seed oil until smooth. Toast the baguette slices in the toaster, then spread the cheese mixture and arrange the cucumber on top. Finally, sprinkle the finely chopped chives on top.
