Arugula platter with tomatoes and cucumbers with balsamic dressing

Ingredients for 4 servings:

  • 1 bunch arugula
  • 1 cucumber(s)
  • 2 tomatoes
  • 2 slices of cheese (Gouda, Grünländer, Maasdam)
  • 2 slices of cooked ham
  • 3 tbsp balsamic vinegar
  • 5 tbsp olive oil
  • 1 pinch of mustard
  • 1 sugar cube
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the arugula in a bowl of cold water and let it soak. Quarter the cucumber lengthwise and then cut into slices. Do the same with the tomato. First quarter the cheese slices and the cooked ham slices, then alternate the cheese and ham on top. Cut this cheese and ham tower into small squares. Drain the water from the arugula. Place the arugula on a platter. Then arrange the cucumbers, tomatoes, and cheese ham squares on top and fold in a little. For the dressing, mix the oil and vinegar with the dollop of mustard. Add the sugar cube to the dressing and stir well with a whisk until the cube is completely dissolved. Season with salt and pepper, then spread it on the arugula platter.
