Avocado salad with honey mustard dressing

Ingredients for 1 servings:

  • 1 avocado(s)
  • ¼ cucumber(s)
  • ½ can chickpeas, approx. 200 g
  • some feta cheese
  • 2 tsp honey
  • 1 tsp mustard
  • 1 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Halve the avocado and remove the pit. Cut into small pieces and place in a bowl. Finely chop the cucumber. Rinse the chickpeas in a colander, let them drain, and add them to the bowl. Crumble some feta cheese and sprinkle it over the salad (season with a little more avocado topping if desired). For the honey mustard dressing, combine the mustard, honey, and olive oil, season with salt and pepper. Drizzle the dressing over the salad and serve.
