Cauliflower and potato pan with curry

Spread the love

Ingredients for 4 servings:

  • 500 g potatoes
  • 2 onions
  • 1 cauliflower
  • 1 tbsp olive oil
  • 2 tsp curry powder
  • salt and pepper
  • 1 garlic clove(s), optional

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Peel the potatoes and cut into small pieces. Divide the cauliflower into small florets and slice the stalks. Finely dice the onion and garlic. Heat olive oil in a pan. Sauté the onion and garlic, add the curry powder, and fry lightly. Add the diced potatoes and cauliflower to the pan. Add enough water to just cover. Simmer for about 15 minutes, until the potatoes and cabbage are tender. Season with salt and pepper. If desired, add more curry powder. Personally, I find 2 teaspoons is too little. But everyone can season to their own taste. If you like, you can also serve the pan with yogurt mixed with lemon juice, salt and pepper, finely chopped mint, and grated cucumber.
