Pea and celery soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 300 g peas, frozen
  • 200 g celery
  • 1 stalk(s) leek
  • 1 apple
  • 600 ml vegetable stock
  • 100 ml cream
  • salt and pepper
  • Thyme

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Chop the onion and sauté in oil until translucent. Add the roughly diced celery and fry briefly. Peel and dice the apple, then add it to the pot along with the sliced ​​leek and peas. Add the stock and simmer for 15 minutes. Add the cream to the soup and puree with a hand blender. Season with salt, pepper, and a little thyme, and simmer for another 5 minutes. Tip: If you want to make the soup even more flavorful, press it through a sieve to remove the pea skins.
