- 30 g soy flour
- 10 g flaxseed, crushed
- 40 ml olive oil

Separate the eggs, beat the egg whites with a little salt until stiff peaks form. Then, mix the egg yolks with the remaining ingredients and a generous pinch of salt. Fold in the beaten egg whites. Transfer the batter to a microwave-safe container with a lid (here, a Tupperware container). Microwave at 600 W for about 3-4 minutes, then let it rest for another 2 minutes with the lid on.
